Ingredients

  • 2 lb (1 kg) lean stewing beef, cut into 1-in (2.5 cm) chunks
  • 2 tbsp (30 mL) all-purpose flour
  • 1/2 tsp (2 mL) each salt and pepper
  • 2 tbsp (30 mL) vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (398 mL) coconut milk
  • 1/3 cup (75 mL) ReaLime® Lime Juice
  • 3 tbsp (45 mL) brown sugar
  • 2 tbsp (30 mL) tomato paste
  • 1 tbsp (15 mL) minced fresh ginger
  • 2 tsp (10 mL) Thai green curry paste
  • 2 kaffir lime leaves (optional)
  • 1/4 cup (50 mL) chopped fresh coriander
  • 3 cups (750 mL) cooked rice noodles or white rice
  • 1 red pepper, thinly sliced
  • 1 cup (250 mL) bean sprouts, well rinsed
  • 1/4 cup (50 mL) chopped unsalted peanuts
