Baked Fillet of Fish with Basmati Rissotto - Salamanca Fresh
This baked fillet of fish is spiced and flavoursome. The 'risotto' is made with Basmati rice, so not technically a true risotto, but delicious none-the-less.
Ingredients
- 1 large fillet of white fish, such as blue eye or striped trumpeter (can be skin on or off, pin boned or not pin boned).
- 1 tablespoon olive oil
- 1 tablespoon butter
- 2 tablespoons olive oil
- 1 cup rice
- 1 leek or 1 brown onion, peeled and finely chopped
- 4 cups hot chicken stock
- 1/2 cup dry white wine.
- 1 quantity of Vicky’s Paste Rub
- 3 – 4 medium thickness slices of a fresh tomato
- Approx 5/8 cup extra stock/white wine combined
