• 1 red onion
• 1 red pepper
• 1 yellow pepper
• 1 Tbsp vegetable oil
• 2 garlic cloves
• Small bunch fresh coriander
• Zest and juice of 1 lime
• 1 Tbsp ground cumin
• 1 tsp smoked paprika
• Sour cream
• Tortilla wraps (for the rest of the family)
