Ingredients

• 9 slices bacon
• 2 Anaheim peppers
• Juice of 1/2 lemon
• 1 ½ tsp salt, divided
• 3 tbsp extra-virgin olive oil, divided
• 10 chives, finely chopped
• 1 shallot, finely diced
• 5 medium heirloom tomatoes, diced
• 1 tbsp smoked paprika
• 8 eggs
• ⅓ cup roughly crumbled goat’s-milk feta cheese
• 1 loaf sourdough or other rustic country loaf, sliced and toasted
