• 2 cups (for the cake) + extra for dusting All-purpose flour
• 1 cup, toasted and roughly chopped Pecans
• 1 cup Golden raisins
• 2 cups Pumpkin puree
• 3/4 cup Maple syrup
• 1 cup Soymilk
• 1 tsp Apple cider vinegar
• 1 tsp Vanilla extract
• 1 cup Date sugar
• 1 tsp Baking soda
• Baking powder (2 tsp mix)
• Spices (cinnamon, nutmeg, ginger) or Pumpkin spice mix (1/2 tsp)
• Salt (As desired)
• Powdered sugar (for dusting)
