Ingredients

• 5 ears corn, shucked, husks reserved
• salt to taste
• ½ cup corn stock, divided (directions at right)
• 1 lb. package of spaghetti
• 2 tbsp olive oil
• 2 cloves garlic, thinly sliced
• 1 tsp chile de árbol flakes
• ¼ cup dry white wine
• ½ tsp ground peppercorn mixture (black, pink, Sichuan)
• 3 tbsp butter
• ¼ cup grated Asiago cheese
• ¼ cup cotíja cheese, plus more for garnish
• lime juice as needed
• ¼ cup cup corn nuts, crushed
