• 2 teaspoons salt
• 1 teaspoon freshly ground pepper
• 1 medium yellow onion, chopped
• 8 ounces fresh mushrooms, sliced
• 1 pound carrots, peeled and cut into 1 1 / 2-inch pieces
• 3 celery stalks, cut into 1 1/ 2-inch pieces
