  • 2 tbsp extra virgin olive oil
  • 1 large onion, chopped small, about 1 cup
  • 6 large cloves garlic, minced
  • 2 large stalks celery, finely chopped
  • 1 ½ tsp salt
  • 6 cups vegetable broth
  • 1 lb brown lentils, rinsed and soaked in water for several hours
  • 3 tbsp red wine vinegar
  • 2 tbsp tomato paste
  • 1 dried bay leaf
  • Zest and juice from one lemon, optional
