• 2 small bunch fresh thyme
• 60 g plant-based mayo
• Olive oil
• flaky salt and black pepper
• 30 g Uhhmami Truffle’ish
• 200 g finely shredded pointed cabbage
• Pickled red onion (see below)
• 2 red onion, thinly sliced
• 30 g sugar
• 10 g salt
• 20 ml red wine vinegar
