Ingredients

• 5 T butter
• 3 T olive oil
• 8 free-range skinless boneless chicken thighs
• 2 cloves garlic, crushed
• 1 cup cream
• ½ cup chicken stock
• 1 T Maille Dijon mustard
• 1 T Maille wholegrain mustard
• sea salt and freshly ground black pepper, to taste
• 4 potatoes, grated
• 30 g Parmesan
• For dressing, whisk:
• 1 t Maille honey mustard
• Juice of ½ lemon
• 3 T extra virgin olive oil
• 40 g rocket, for serving
