Ingredients

  • 12 sm shallots (8½ oz/240g), peeled and left whole (8 oz/220g)
  • 5 garlic cloves, peeled and crushed with the side of a knife
  • 1 ¾ c pre-cooked and peeled chestnuts
  • 4 bay leaves
  • 1 tbsp maple syrup
  • 9 tbsp olive oil
  • 6 tbsp Shaoxing wine (or pale dry sherry)
  • ¼ c soy sauce
  • 6 ⅓ oz red grapes
  • 1 ¾ lb Brussels sprouts, trimmed and halved lengthwise
  • Table salt
  • 2 green chiles, finely sliced into rounds
  • 2 tbsp rice vinegar
  • 1 tsp superfine sugar
  • 3 tbsp parsley leaves
