Ingredients

• 2 tablespoons butter
• 2 tablespoons flour
• 1/2 teaspoon salt
• Pinch pepper
• 1 teaspoon mustard powder
• Dash of hot sauce
• 2 tablespoons chives or green onion, chopped
• 3/4 cup milk
• 4 eggs, separated
• 1 cup old cheddar cheese, grated (or blue, goat, or a smoked cheese)
• 1/4 teaspoon cream of tartar
