Ingredients

  • 1 large Ocean Mist Farms artichoke, finely chop & cooked (artichoke stem, heart and crown set aside for bread; save cooked petals for healthy snacking)
  • 4 cups all-purpose flour
  • 6 Tbsp. sugar
  • 1 tsp. baking soda
  • 2 tsp. salt
  • 1/4 cup cold butter, cut into small pieces
  • 1-3/4 cup buttermilk
  • 1 large egg
  • 3 Tbsp. fresh orange zest
  • 1 cup golden raisins, tossed with a a little all purpose flour
  • Preheat oven to 375 degrees.
  • Spray a sheet pan with non stick cooking spray.
  • In a bowl of electric mixer, with paddle attachment, combine flour, sugar, baking soda and salt.
  • Add the butter to the flour and mix into the flour just until butter is combined into the flour.
  • In a medium size bowl beat egg with fork and add buttermilk.
  • At low speed add buttermilk mixture to flour and mix until well combined.
  • Add orange zest, raisins and artichokes to flour mixture and continue to mix until well combined.
  • Place dough on a floured board and knead dough for a minute.
  • Form dough into a round loaf. Place the loaf on the prepared baking sheet and using a sharp knife make an “X” on top of the loaf.
  • Bake loaf for one hour or until golden brown and the bread cracks on the top of the loaf are very dry.
  • Cool on a baking rack.
  • Serve with butter or marmalade.
  • Store left over bread in the refrigerator and warm up left over bread slices in the toaster..
