Traditional Irish Stew Recipe - Great Food Ireland

Ingredients

• 2 tbsp olive oil
• 1 kg lamb shoulder, cut into 4 cm cubes
• 1 large onion, finely chopped
• 2 leeks, finely sliced
• 3 large 3 carrots, peeled and cut into 1 cm rounds
• 2 parsnips peeled and cut into 1 cm rounds
• 1 kg potatoes, peeled and cut into large chunks
• 750 ml beef broth
• 1 bay leaf
• 1 tsp fresh thyme leaves
• Salt and pepper to taste
• Fresh parsley, chopped, for garnish
