If you love eggplant, like I do, then here's another delicious way to prepare them. Pickled eggplant are pretty easy to make and quite addicting!
Ingredients
- 3-4 small Chinese eggplant
- 1 tbs sea salt
- 5 cloves garlic (peeled)
- 4 serrano peppers
- ¼ bunch Italian parsley
- 1 cup white vinegar
- 1 cup water
- ½ tbs sugar
