Ingredients

• 100 g pancetta
• 1 tbsp olive oil
• 1 onion finely chopped
• 1 carrot finely diced
• 2 stalks celery in small cubes
• 300 g minced beef
• 100 ml dry red or white wine
• 300 ml beef stock
• 100 ml concentrated tomato purée
• 2 bay leaves
• 1 tsp coarse salt
• freshly ground pepper
• 100 ml milk
• 50 g butter
• 4 tbsp wheat flour
• ½ l milk
• 1 tsp nutmeg, finely grated
• ½ tsp coarse salt
• 12 lasagne sheets
• 100 g parmesan cheese, freshly grated
• 250 g green salad sprinkled with salt and pepper
