Ingredients
- 1 kg ox cheeks in 4 pieces (ox cheeks vary hugely in size; use 4 x 250g cheeks or 2 x 500g cheeks, cut in half)
- 500ml red wine
- 5 bay leaves
- small bunch of thyme
- 1 small star anise
- 1 whole clove
- 2 tbsp vegetable oil
- 6 carrots 2 roughly chopped, 4 left whole
- 1 large onion roughly chopped
- 2 celery sticks roughly chopped
- 2 garlic cloves chopped
- 500ml beef stock
- creamy mash to serve
