• 1 tsp Dijon Mustard
• 6 Spring Onions, cut into 1.5cm pieces
• 6 rashers Smoked Bacon, diced
• 2 Baby Gem Lettuce, root trimmed and cut into 1/8's through the root
• Maldon Salt, to taste
• 300g Peas
• 4 Chicken Breasts, butterflied
• 3 Cloves Garlic, peeled and chopped
• 2 tbsp Olive OIl
• 1 Lemon, zest and juice
• 2 tbsp Crème Fraiche
