Ingredients

  • 1/2 Onions, medium, diced
  • 2 cloves Garlic, chopped
  • 1 Jalapenos (opt), thinly sliced (seeds removed for less spice)
  • 2 bunches Collard greens, stems removed, leaves chopped (sub kale)
  • 1 tsp Coriander, ground
  • 1/2 tsp Salt
  • 1/2 tsp Cumin, ground
  • 1/4 tsp Turmeric, ground
  • 1/4 tsp Cardamom, ground
  • 1 Limes, wedges
  • 3 Tbsp Ghee (sub butter)
  • 2 Tbsp Tomato paste
  • 2 tsp Berbere spice, more or less to taste
  • 2 1/2 cups Water
  • 1 cup Lentils, red and uncooked
  • for serving Flatbread (use Injera if you can find it, but naan or pita will work as a substitute)
