• 3 tablespoons Gefen Light Olive Oil
• 1 medium onion, chopped
• 24 ounces chopped spinach, thawed overnight and squeezed dry
• 8 ounces crumbled Ta’amti Feta Cheese
• 2 eggs
• pinch of nutmeg
• Manischewitz Kosher Salt, to taste
