- 8 large pimento stuffed green olives, sliced
- 2 tablespoons capers, drained
- 1 (14 ounces) can diced tomatoes
- 2 tablespoons distilled white vinegar
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground cloves
- 1 teaspoon ground cumin
- 2 teaspoons oregano (preferably Mexican)
- 2 tablespoons chopped cilantro
- 1 bay leaf
- 1 teaspoon hot sauce, or to taste
