• 350 g 00 flour or plain flour
• 150 g fine semolina flour plus extra for dustin
• tsp. salt
• 20 g fresh yeast or 7 sachet fast-action dried yeast
• 1 tsp. runny honey
• 3 tbsp. extra-virgin olive oil
• 700 g ripe red tomatoes peeled, cored and halved
• 5 tbsp. olive oil
• 3 garlic cloves, chopped, then creamed with salt
• 1 tbsp. tomato paste
• Pinch dried oregano
• Plenty of freshly ground black pepper
