Asparagus and Potato Chowder - Chew Nibble Nosh

Ingredients

• 1 1/2 lbs. medium-thick asparagus
• 2 large sweet onions, 1 quartered and 1 finely chopped
• 1/2 cup heavy cream
• 1 Tbsp. cornstarch
• 3 Tbsp. butter
• 1 clove garlic, minced
• 1 tsp. Dijon mustard
• 1/4 cup dry white wine
• 1 lb. Yukon Gold potatoes, peeled and cut into a 1/2 inch dice
• 3/4 cup mascarpone cheese, or cream cheese, at room temperature
• 1 Tbsp. fresh dill, minced, plus more for garnish
• salt and pepper
