Strawberry Layer Cakes from Mighty Spice Express Cookbook by John Gregory-Smith
These awesome crispy, creamy strawberry layer cakes are a nod to my time in Morocco. Cinnamon, orange and vanilla add the exotic flavours and turn this dessert into something out of the ordinary.
Ingredients
- 3 tbsp icing sugar
- 55 g/2 oz/scant ½ cup walnut pieces
- 1 tsp vanilla extract
- 350 g/12 oz/2⅓ cups strawberries
- 2 large sheets of filo pastry, defrosted if frozen
- ½ orange
- ½ tsp ground cinnamon, plus a little extra for dusting
- 300 g/10½ oz/scant 1¼ cups full-fat Greek yogurt
