Ingredients

• 1/4 teaspoon, plus more for further seasoning
• 2 lemons, one lemon zested
• 4 Globe Artichokes, prepped like this, quartered
• 2 cups short grain rice like Arborio
• 1 cup dry white wine
• 2 teaspoons thyme, minced, plus some for garnish
• Black pepper, to taste
• 1/4 cup mascarpone
• 2 ounces cream cheese, room temperature
• 1/2 ounce heavy whipping cream, room temperature
• 1 teaspoon sour cream, room temperature
