Artichoke Risotto Recipe

Ingredients

• 5 1/2 cups (or more) chicken broth
• 2 tablespoons butter
• 2 tablespoons olive oil
• 1 cup finely chopped onion (or scallions are good too)
• 2 cans artichokes, chopped and drained (or the frozen bags from Trader Joes are good!)
• 1 1/2 cups arborio rice (about 10 oz)
• 1/2 cup dry white wine
• 1/2 cup grated Parmesan cheese
• Lemon Juice
• Cilantro
