Ingredients

• 1-½ pound Chocolate*, Chopped (see Note)
• ⅔ cups Freshly Brewed Espresso
• ¼ cups Ginger Liqueur
• ¼ cups Dark Rum
• 1 ounce, fluid Habanero Liqueur (if Available - Mine Is Homemade)
• 2 teaspoons Cinnamon
• 2 teaspoons Freshly Grated Ginger
• 2 Tablespoons Finely Chopped Candied Ginger
• 1 teaspoon Cayenne
• 1-½ teaspoon Vanilla
• 4 whole Egg Yolks
• 1 pint Heavy Cream
• ¼ cups Sugar
• 8 whole Egg Whites
• 1 pinch Salt
