Lemon Loaf recipe by Sue

Ingredients

• 3 eggs
• 1 cup sugar
• 1 cup (250ml) sour cream
• Add ½ cup oil ( I used canola)
• Add whilst beating the mixture
• 2 tablespoons lemon zest (fresh)
• 1 tablespoon lemon essence
• ¼ teaspoon salt
• 1 ½ cup cake flour
• 2 teaspoons baking powder
• 180 deg
• Add 1 cup icing sugar into a bowl and add freshly squeezed lemon juice until the icing is smooth but not runny ..
