- 2-3 tbsp vegetable oil
- 900g braising steak, cut into large chunks
- 2 tbsp plain flour
- 500ml good-quality beef stock
- 3 thyme sprigs
- 2 tbsp butter
- 1 small onion, finely chopped
- 2 garlic cloves, crushed
- 250g Portobello mushrooms, sliced
- 1 tbsp wholegrain mustard
- 2 tsp Marmite
- 2 tsp golden caster sugar
- 1 x 375g pack ready-rolled puff pastry
- 1 medium egg, beaten
