Beef Enchilada Casserole

Ingredients

• 2 pounds ground chuck
• 1/2 medium white onion (diced)
• 3 cloves garlic (minced)
• 1/2 medium jalapeño (deseeded and minced (optional))
• 1/2 cup taco seasoning
• 1/2 teaspoon kosher salt
• 1/2 cup beef stock (or water)
• 1 15-ounce can black beans (rinsed and drained)
• 3 1/2 cups red enchilada sauce
• 1 pound Monterey Jack cheese (shredded)
• sour cream (to taste)
• chopped cilantro (to taste)
• sliced jalapeños (to taste)
