Honey Mustard Potato Salad Recipe :: The Meatwave

Ingredients

• For the Dressing
• 1 cup mayonnaise
• 2/3 cup honey
• 1/2 cup yellow mustard
• 1/3 cup sour cream
• 1/3 cup apple cider vinegar
• 1/4 cup sweet pickle relish
• 1 tablespoon paprika
• Kosher salt
• Freshly ground black pepper
• 5 lbs yukon gold potatoes, cut 2-inch cubes
• 1 large yellow onion, finely diced
• 2 tablespoons canola or vegetable oil
• 4 stalks celery, finely diced
• 5 hard boiled eggs, diced medium
• 2 tablespoons finely chopped fresh parsley, for garnish
