• 1 medium finely chopped onion
• 2 medium sliced or chopped carrots
• 4 cloves grated garlic
• 1 14 oz chopped tomatoes
• zest from 1 whole orange
• 1/3 cup kalamata or green olives
• 3-4 sprigs fresh parsley leaves for garnish
• 2 red skinned potatoes, peeled and cut into 1" cubes
