Cassoulet - Maine Organic Farmers and Gardeners

Ingredients

• 4 oz. bacon
• 1 onion, chopped – about 1 cup
• 4 cloves chopped garlic
• 3/4 c. chopped leeks
• 2 ribs celery chopped, or about 3/4 cup chopped celeraic
• 2 carrots chopped, generous 1 cup
• 2 c. chopped mushrooms
• 4 c. lobster stock
• 4 c. white beans, cooked al dente
• 1 c. or so chopped, frozen bell peppers
• 1/4 c. tomato paste
• 1 lb. Maine lobster meat
• Bay leaf
• 1/4 c. chopped fresh parsley
• Garlic buttered crumbs
