Ingredients

  • ½ medium bulb fennel, trimmed, cored, and cut into matchstick strips
  • 2 large Belgian endive [chicory], trimmed and cut across into ¼-inch (.5-cm) strips
  • 1 medium celery root, trimmed, peeled, and cut into matchstick strips
  • 1 medium onion, cut into ¼-inch (.5-cm) slices
  • One 3½- pound (1.6- kg) chicken, skinned, meat removed from bones, cut into 2-inch (5-cm) squares, or 1¾ pounds (800 g) skinless boneless chicken breasts
  • 2 teaspoons kosher salt, or less if using commercial broth
  • 4 cups (1 l) Basic Chicken Stock or commercial chicken broth
  • 1 cup (250 ml) heavy cream
  • 4 tablespoons (60 g) unsalted butter
