Silkie Chicken Stew - Freefield Farms

Ingredients

• 2 whole Silkie Chickens
• 4 whole white onion, peeled, thinly sliced
• 4L water
• 2L coconut water OR water
• ½ cup white sugar
• ⅓ cup fish sauce
• 3 pieces of star anise – optional
• 1 cup ginger, peeled
• 3 cups of thinly sliced napa cabbage
• 10 cloves of garlic, smashed with a blade
• 4 jalapeños, destemmed, and cut into halves
• 1 cup of fresh Thai basil leaves or Italian basil
• 1 cup of chopped cilantro
• 1 cup of thinly sliced green onion leaves
• 2 cups of thawed frozen corn niblets
