Forbidden Rice and Garbanzo Patties with Tomatillo Salsa - Bravo PB
“Forbidden” rice, which is black, is my favorite variety. The name refers to the time when only emperors were allowed to eat this delicious rice. It was forbidden to everyone else.
Ingredients
- 1/2 pound cremini mushrooms
- 3 cups Cooked Garbanzo Beans (chilled (see note))
- 2 cups cooked forbidden rice (chilled (see note))
- Kernels sliced from 2 ears fresh corn (or 2 cups thawed frozen or drained canned corn)
- 1 stalk celery (coarsely chopped)
- Juice of 1 lemon
- 1 shallot (coarsely chopped)
- 2 tablespoons chopped fresh cilantro
- 1/2 teaspoon ground coriander
- 1 cup vegetable broth
- 2 cups Tomatillo Salsa
- 20 kale leaves (stemmed and cut into 2-inch pieces)
- 1 celery root (peeled and diced)
