Curried carrot potato soup | KitchenAid IE

Ingredients

• 1 tbsp olive oil
• 1 yellow onion, chopped
• 2 cloves garlic, chopped
• to taste sea salt
• 500 g potatoes, peeled and chopped
• 2 carrots, peeled and chopped
• 500 ml chicken or vegetable stock
• 1-2 tbsp packed brown sugar
• 1 tbsp yellow curry powder
• 1-2 tbsp fish sauce
• 1 tbsp fresh ginger, peeled and roughly chopped
• 400 g coconut milk, shaken well before opening
• to taste fresh basil, chopped, for garnish
