Ingredients

• 2 tablespoons olive oil
• 1 yellow onion, finely chopped
• Salt & freshly ground pepper
• 2 pounds fresh tomatoes chopped
• 2 cups white wine
• 1/4 cup olive oil
• 4 garlic cloves, finely chopped
• 1 cup cured black olives, pitted and coarsely chopped
• 1 tablespoon capers, drained
• 1/2 cup fresh herbs including basil, parsley and thyme, roughly chopped
