• 2 c Cane Sugar (Sub two tablespoons dark brown sugar for and extra rich cake )
• 4 lg Eggs, fresh (We loved using Pete & Gerry's)
• 3 c Carrots, shredded (see notes)
• 2 c AP or Soft Pastry Flour
• 2 tsp Baking Soda
• 1 tsp Salt
• 2 tsp Cinnamon, ground
• 1 tsp Vanilla
• 1/2 c Walnuts or Pecans, toasted, chopped
• 8 oz Cream Cheese, room temperature
• 6 oz Butter, room temperature
• 1 lb Powder Sugar, sifted (About 3 1/4 cups)
• Pinch Salt
• 1 tsp Vanilla Extract
• Squeeze Lemon Juice (optional)
