Ingredients

• 4 brown onions – chopped
• 1 red onion – quartered
• 1 shoulder lamb – bone in
• 1 l beef stock
• 6 garlic cloves – chopped
• 1 sprig thyme
• 2 sprigs rosemary
• 3 - 4 bay leaves
• ½ pumpkin – sliced
• 1 large sweet potato – roughly chopped
• 2 garlic bulbs – halved
• 3 tbsp olive oil
• Sea salt
• Black pepper
