Ingredients

• 1 1/2 pounds Russet potatoes (about 3 large or 4 small potatoes)
• 8 tablespoons of butter, divided
• 1/2 large onion, finely chopped (about a cup)
• 1/3 red bell pepper, finely chopped (about a 1/2 cup)
• 2 cups homemade cream of chicken soup (store-bought will also work)
• 2 cups shredded mild cheddar cheese
• 1 cup sour cream
• 1 1/4 teaspoon salt, divided
• 1 teaspoon fresh ground black pepper
