Cheesy Potatoes, AKA “Funeral Potatoes” | A Cup Of Cream

Ingredients

• 1 ½ -1 ¾ pounds of russet potatoes, cooked, peeled, and diced small. *see note
• 2 Tablespoons butter
• 1 small onion, diced
• 1 clove of garlic, minced
• 2 tablespoons flour
• ¾ cup chicken broth
• ½ cup milk
• ¾ tsp salt
• ¼ tsp pepper
• ¼ tsp rosemary
• ¼ tsp thyme
• 1 cup shredded sharp cheddar cheese
• 1/3 cup sour cream
• 10 ritz crackers, crushed into crumbs
• 1 1/4 cup corn flakes, crushed
• 1 ½ tablespoons melted butter
