- 1 pound Italian sausage, casings removed if necessary
- 1/2 small onion, grated

- 1/4 cup whole milk
- 1 large egg
- 1/4 cup freshly grated Parmesan
- 1/4 cup chopped fresh parsley leaves
- 2 cloves garlic, minced
- 2 Tablespoons chopped fresh basil
- 1 teaspoon salt
- freshly ground black pepper, to taste
- 1/4 cup olive oil
- 4–5 cloves garlic, thinly sliced
- 1/2 teaspoon red pepper flakes, or more to taste
- 1 28-ounce can fire-roasted crushed tomatoes (see Chef’s Note)
- 3 large sprigs of basil, about 15 leaves total
- 6 French hoagie-style rolls, cut in half
- 6 Tablespoons softened butter
- 1 clove garlic, mashed to a paste with 1/4 teaspoon salt
- 10 ounces mozzarella cheese, shredded or thinly sliced
- 6 Tablespoons grated Parmesan
