Ingredients

• 1 pound boneless beef sirloin, trimmed
• 1 tablespoon unsalted butter
• 5 to 6 tablespoons olive oil
• 1 medium onion, finely chopped
• 1 shallot, finely chopped
• ½ teaspoon Mexican 3-Chile Blend
• 2 cloves garlic, minced
• 4 shiitake mushrooms, sliced
• ½ cup Barley
• ½ cup Italian Arborio Rice
• 3 cups beef stock
• Salt and pepper to taste
• ¼ teaspoon chopped fresh sage
• 1½ tablespoons chopped fresh parsley
