Ingredients

• 2 curry mix packets (I prefer 1 Vermont Curry & 1 Java Curry )
• 1-1½ large onion, diced
• 3-4 large potatoes, cubed, skin optional
• 2 red apples, cubed (Honeycrisp ideally)
• 2-3 carrots, peeled & cubed
• 2 bell peppers, sliced into strips
• 1 jalapeno, diced (seeds optional)
• 1 tbsp minced ginger (I use paste because I’m lazy)
• 1½ tbsp honey
• 1 quart vegetable broth
• ¼ cup soy sauce
• 1 tbsp sesame oil
• white rice
• water
