- 1/2 cup caster sugar
- 1 vanilla bean
- 1/2 cup water
- vanilla ice-cream, to serve
- PISTACHIO CRUNCH:-
- 125 grams butternut snap cookies (1/2 packet)
- 1/2 cup pistachios
- 1/2 cup rolled oats
- 1/3 cup brown sugar, firmly packed
- 50 grams unsalted butter, melted
