Ingredients

• 2 tablespoons extra virgin olive oil
• 1 onion, minced
• 1 1/2 carrots, minced
• 1 1/2 pounds lamb, minced or ground
• 1 tablespoon tomato paste
• 1 tablespoons Dijon mustard
• 1 cup hot beef or lamb stock or chicken stock
• Salt and pepper
• 4 cups freshly made mashed potatoes
• 1 tablespoon butter, melted
