Ingredients

• 4 bunches mixed beets or
• 4 large red beets
• 4 1/2 tbsp blanched, peeled and sliced almonds
• 6 3/4 tbsp yogurt, plus more as needed
• 5 tsp roasted garlic
• 1/2 tbsp pickled hot pepper liquid
• 1/2 tbsp sherry vinegar
• 4 tsp fromage blanc
• 3 tsp shallot, minced
• 1 tsp fresh lemon juice, plus more as needed
• 1/2 tsp honey
• 1/2 tsp dill, chopped
• Maldon salt
• Celery Salt
