Ingredients

• ½ tsp ground ginger
• 1 ¾ tsp bicarbonate of soda
• 1 ½ tsp ground cinnamon
• ¼ tsp ground all spice
• 1 tbsp ground coffee (finely ground like espresso)
• 280g plain flour
• 170g unsalted butter (melted and cooled)
• 110g dark brown sugar
• ¼ cup (85ml) honey
• 150g of granulated sugar (plus more for rolling)
• 1 large egg
