Ingredients: 1 recipe fried Trejo’s Donuts (this page), still hot, placed on wire racks; Chocolate Crumb Topping; ½ cup confectioners’ sugar; ⅓ cup all-purpose flour; ⅓ cup unsweetened Dutch-processed cocoa powder (we use Valrhona); ¼ teaspoon kosher salt; 10 tablespoons (1¼ sticks) unsalted butter, cut into ½-inch pieces; Dark Chocolate Glaze; 4 cups confectioners’ sugar; 1½ cups heavy cream; 1½ teaspoons Lyle’s Golden Syrup (see Trejo’s Tip, this page), light corn syrup, or honey; ¼ teaspoon vanilla extract; 4½ ounces 70% cacao bittersweet chocolate (we use the Guanaja variety from Valrhona), chopped (about ½ cup)
